A light and fragrant almond cake, with a decadent topping of whipped mascarpone cream, and a scattering of toasted almonds. This is my own rather indulgent take on a classic ‘Tarta de Santiago’, but instead of a dusting of icing sugar on top, we have a slightly naughtier layer of orange infused whipped mascarpone cream!! Yum!!!
